Description: In today's vlog, we stay in the small surf town of Kaikoura on the East Coast of New Zealand's, South Island. We all take our first helicopter ride, freedom camp at the famous surf spot Meatworks and finally make it back to a nice home cooked meal at our friends' vegan-friendly hotel - Eco Villa. ----------------------------------------- ➳ RECIPE!!! Pineapple Baked Tofu with Seared Pineapple Rings and Greens - recipe adapted from Vegan Yum Yum by Lauren Ulm Ingredients: 2 blocks organic tofu, chopped into rectangles or whatever you wish - we use Tonzu 1 cup pineapple juice (from the can of pineapple rings) 1/4 cup tamari or more (taste it to see) 12 Pineapple rings (we used fresh pineapple and tinned pineapple) 1/4 cup coconut milk or more (taste it to see) 4 large handfuls of spinach, broccoli and bok choy, washed 1 large avocado 3 cups cooked rice (brown basmati is our favourite) 1/4 teaspoon guar gum (optional) 1. Preheat oven to 400F / 200C. 2. Make the pineapple marinade: Mix pineapple juice and tamari together. In a baking dish, place the chopped tofu in the marinade. bake for 15-20 minutes, flipping over after 10 minutes. 3. While the tofu cooks, cook the rice. Lightly oil a hot skillet with coconut oil. Sear the pineapple rings on both sides, until nicely coloured. Set aside. 4. Remove the tofu from the baking dish and pour the marinade into a bowl. Now out the tofu on some baking paper/ parchment paper and bake for a further 12 minutes until the tofu is crispy, flipping after 10 minutes. 5. Heat the green in the same wok that the pineapple rings were seared in, with a very small amount of water. Stir-fry using tongs until the greens are tender. DO not over cook. 6. Place the left over marinade into a small pot/ saucepan and heat. Add the coconut milk and whisk. Turn off the heat and add thickener guar gum if using. Whisk. 7. Plate up the rice, greens, tofu and pineapple. Pour the sauce over the finished dish and serve with avocado and a glass of kombucha!! YUM! Should serve two hungry herbivores and one mini herbivore!
